OpenBSD has ports of courier-imap and uw-imap, in ports/mail.  (I thought
there was a port of cyrus, but there doesn't seem to be on my -current
system.)  Most people here would probably favor courier-imap, as 
uw-imap has a rather checkered security history.  You might be able to
find some more IMAP servers at www.freshmeat.net, www.sourceforge.net,
or www.imap.org.
