Timezone woes

I've got a feeling I am doing something stupid here but I can't see it.
I would like the timezone on my system to be GMT, so I have linked /etc/
localtime like so:
lrwxr-xr-x 1 root wheel 23 Feb 25 03:21 /etc/localtime -> /usr/share/zoneinfo/GMT
If I run date I get:
Mon Feb 25 03:21:10 PST 2002
I have also tried setting the TZ enviroment variable and using zic -l.
I have RTFM'd but cannot see what is wrong.
Anybody want to make me say "Doh!!!!"?
