Well, if a UPS is out of the question, Xantrex (www.xantrex.com)
offers great sine-wave inverters. Keep in mind that this solution is
very costly $$$ and you could perhaps power your house/appartment with
it as well for a few hours.
I have one in my house and it works great. I live in Guatemala and
the power goes off all the time (or very often). This has kept all my
systems up for hours while the service is being repaired.
If you are concerned about data-loss, purchase good hardware and RAID
it and have another system mirroring it. Plus make sure that you only
use your system for a mail server (less things running == less
possible bugs).
